So, if you look up the 2016 case DLW vs. Supreme Court of Canada bestiality requires penetration involving a penis. So they pretty well scrutinised it at the supreme court level. Most people would agree that anal sex is still sex. Hence why it is called anal sex. Likewise, whether you like it or not, oral sex is a form of sex.
None of the examples you listed (sexual intercourse, coitus, copulation, coupling, mating) are synonyms for sex. Sex is a broader category, as can be seen by the way we actually use the term.
You're free to not consider mutual masturbation as a type of sex, naturally, but I pose to you that any functional definition for sex that actually encompasses how the word is used would also include things like mutual masturbation. To put it another way, you have the right to define sex in an arbitrary or inconsistent manner, but that doesn't mean I need to agree with your definition.
